Fresh Cucumber & Tomato Salad Recipe

Early morning salad recipe, coming at you! A very simple, healthy and delicious meal or snack, that's inexpensive and easy to make.

You can use any quantities you like. It's all a matter of taste. I have included my portions for reference. This will last a couple days.

  • 6 Persian Cucumbers, sliced
  • 3 dozen Cherry or Grape Tomatoes, halved. If you have large tomatoes, slice or chop them as you like.
  • 4 slices Fresh Mozzarella, quartered, chopped or sliced. You can also use feta or goat cheese.
  • Fresh Ground Black Pepper & Sea Salt to taste
